Sugared Cranberries
These are the most beautiful garnish. They sparkle and elevate any dessert, and are very easy to make. If you can get your hands on some fresh cranberries, go for it!
HOW-TO
Yield: 1 cup
INGREDIENTS
1 cup fresh cranberries
1/4 cup water
1 cup granulated sugar, 1/4 cup separated
DIRECTIONS
In a small or medium sauce pan on medium heat, combine 1/4 cup of sugar and water. Stir until sugar is dissolved.
Add cranberries and allow them to cook right until they pop or you see the skin break. Remove from heat.
Drain cranberries and reserve sugar mixture (optional) for sweetening beverages.
Place cranberries onto a cooling rack or sheet tray and allow to dry for 45 min to 1 hour, or until slightly tacky.
Roll cranberries and the remaining sugar. * Save the sugar.
If the sugar on the cranberries appears to be wet simply re-roll them in more sugar. After 1 hour or so this happens.
You can store them in an air tight container in the refrigerator overnight and re-roll them in sugar when you’re ready to use them.
