Salsa Verde Breakfast

Give me this everyday, please. Salsa verde potatoes, eggs, queso fresco and fresh tortillas. Recipe below for the salsa verde potatoes. The recipe is slightly modified from @salty_cocina ‘s on Instagram.

Salsa Verde Potatoes Recipe

Yield: 3 servings

INGREDIENTS

4 tomatillos

2 jalapeños

1/8 of an onion

2 garlic cloves

1/4 cup cilantro

salt and chicken powder to taste

1/2 Tablespoon oil

2 russet potatoes, peeled and medium diced

DIRECTIONS

  1. In a blender, blend the tomatillos, 2 jalapeños, onion, garlic and cilantro with 1 cup of water.

  2. In a medium-size pot on medium heat add the oil and then all the potatoes. Cook for about 2 minutes.

  3. Pour into the pot your blended tomatillo mixture, stir and allow to cook until the potatoes are tender. About 10-15 min.

  4. Taste and add salt and chicken powder to taste.

  5. To make it a complete breakfast, fry up some eggs, top with a few crumbles of queso fresco and some warm tortillas.
