Canna Pasta

Show-stopping pasta that celebrates an iconic leaf.

For the holiday (420!) I wanted to make something celebratory. Something that would allow cannabis to show off, to take up space, to shine through and say, “I’m here, been here, not going anywhere”.

The iconic weed leaf we have all come to know is the part of the cannabis plant called the fan leaves. They are the largest leaves of the entire plant and play a crucial role in the development of cannabis. Since they’re the largest, the fan leaves are able to absorb the most light contributing to the process of photosynthesis. They also take in the most CO2. They are a major organ. And they do not get you high, fyi.

Typically, the fan leaves are ultimately discarded, but I wanted to repurpose them and let them have a moment. So I decided to make laminated pasta. I placed them in between two, wide sheets of pasta and rolled it all out together, and out came a thing of beauty- canna pasta. Happy 420. I hope you celebrate your way.

You want to portion the dough and cover the unused pieces as you work so they don’t dry out. I made an egg dough using 325 grams all-purpose flour and 4 large eggs. This amount is good for 4-6 people.

I first roll the dough out to setting #6 and lay the sheets out to assemble.

I pre picked out some fan leaves.  How beautiful!

Place the leaves throughout and next place the other pasta sheet on top.

With your hands, press down firmly.  If it’s not sticking together enough, remove the top sheet of dough and brush a bit of water in the negative spaces and try again.

Run the pasta through on setting #4 and then #5 and there you have it, laminated pasta!!!

Cut into your desired shape.  I cut it into a wide, pappardelle so the leaves still had an opportunity to shine.
